Why almost no mushrooms can be eaten raw
There are several reasons, and all of them serious:
- Natural toxins. Many mushrooms contain substances that break down only when heated. For example, honey fungus and other popular species are poisonous raw but perfectly safe cooked.
- Cell walls that are hard to digest. Mushroom fiber (chitin) is poorly digested even after cooking, and raw even less so, which is why raw mushrooms cause heaviness and an upset stomach.
- Dirt and parasites. Bacteria, soil particles and larvae settle on wild mushrooms. Heat treatment neutralizes all of that.
So the main safety rule is simple: wild mushrooms must be thoroughly boiled or fried.
Which mushrooms are still eaten raw
Only certain mushrooms are eaten raw (and only in small amounts), usually cultivated ones rather than wild:
- button mushrooms — young store-bought button mushrooms are sometimes thinly sliced into salads;
- truffle — it's added in thin shavings for its aroma;
- young porcini — in some cuisines it's thinly shaved into carpaccio.
But even here a caution applies: this only goes for perfectly fresh, definitely edible mushrooms from a reliable source, in small portions. Wild mushrooms “from the basket” are best never eaten raw.
