Mushroom season
Spring mushrooms of Europe
March – May · 73 species · 48 edible · 6 poisonous
Spring in Europe's forests isn't a loud comeback — it's a quiet awakening. Even before the leaves unfurl and grass covers the clearings, the first edible mushrooms of the season are already popping up in damp broadleaf woods. The scarlet elf cup (Sarcoscypha austriaca) and morels come out while there's still wet snow on the ground — in March and April, when nobody's expecting them.
In spring, the mushroom season follows the temperature: daytime warmth above 8–10°C and no night frosts are what get the mycelium going. In May, the morels and knights are joined by the first chanterelles in the pine forests — golden-orange, firm, with a fruity scent. To catch the flush, keep an eye on the rainfall map and head out 5–7 days after the first warm rain.

Spring mushrooms: what, where and when
Which mushrooms grow in spring? Europe's list of spring mushrooms is shorter than the summer or autumn one, but it holds some real delicacies. The edible spring mushrooms are, first of all, morels (the common morel and the black morel), knights (Tricholoma), and the first slippery jacks and chanterelles. In warm broadleaf woods, the bright red cups of the scarlet elf cup peek out — one of the very first spring mushrooms, and one many people don't even recognize as a mushroom.
The first mushrooms after winter appear as early as late March, depending on where you are. In the lowlands and the south spring arrives earlier; in the mountains and the cooler north the season starts 1–2 weeks later. The big spring harvest comes in May: that's when the forest gives up morels, wood blewits and the first chanterelles. If you're wondering when morels grow, go by April — the time when dandelions bloom and birch leaves open.
By month
Spring by month
Spring lasts three months — march, april, may — and each has its own mushroom character. Some species fruit at the start of the season, others at its height, and still others toward the end. Pick a specific month to see the full list of mushrooms that grow right then, with tips on the weather and where to forage.
Safety
Poisonous spring mushrooms
Spring is a dangerous season for beginners. The death cap comes up in spring too, and it looks like a young field mushroom. The destroying angel (Amanita virosa) and the spring amanita (Amanita verna) are deadly poisonous, yet they resemble edible knights. There's just one rule: if you're in any doubt, leave it.
Of the 6 species of dangerous mushrooms active in spring, the most dangerous are the deadly poisonous ones: Deadly fibrecap. All of them have edible lookalikes — check every find.

Edible spring mushrooms — which are the best?
The most prized spring mushrooms: the common morel (Morchella esculenta), the black morel (Morchella conica), the golden chanterelle (late May) and the slippery jack (May). All of them have to be cooked — never eat them raw.
When do the first mushrooms appear after winter?
The first mushrooms after winter show up as early as March — scarlet elf cups (Sarcoscypha). Morels grow in April. The main spring season for edible mushrooms starts in May, after the first warm rains.
Are there poisonous mushrooms in spring?
Yes — and this is critical to know. In spring you'll find the death cap, the destroying angel and the spring amanita (Amanita verna). All of them are deadly poisonous and come up at the same time as edible knights and field mushrooms. Check every single mushroom.
Where can you pick mushrooms in spring?
In spring, look for morels in damp broadleaf woods (ash, aspen, old apple trees); knights in pine forests; chanterelles and slippery jacks (late May) in mixed pine woods and along forest edges.
When does mushroom season start in spring?
It depends on the weather: in warm years the first morels appear in late March, in cold ones in mid-April. The main spring season unfolds in May. In the mountains and in colder regions the season starts 1–2 weeks later.
